Having a busy Monday today on the interweb today! It is a new week, and that means new recipes to try out for the bosses.
Starting off Monday, lunch was Chicken Enchiladas… I’ve made this once before, I ate the whole thing alone I think; I just remember not being able to stop, laying on the floor after because I was so full! Perfect way to start the week me thinks…
Here is the recipe:
4 skinless, boneless chicken breast, cut in to cubes
1 onion, chopped
150ml sour cream
2 cups shredded cheddar cheese
1 tbsp dried parsley
1/2 tbsp dried oregano
1/2 tsp black pepper
1/2 tsp salt
1 can tomato sauce
1/2 cup water
1 tbsp chilli powder
1 clove garlic, minced
8-10 flour tortillas
1 jar enchilada sauce (can be found in nakumatt)
Preheat oven to 180℃.
Cook the chicken in a medium pan over medium heat, until no longer pink and starting to brown. Add the onion, sour cream,1/4 of the cheese, parsley, oregano and pepper.
Cook this until cheese melts. Stir in salt, tomato sauce, water, chilli powder and garlic.
Roll even amounts of the mixture in the tortillas. Arrnage in a baking dish. Cover with the enchilada sauce, and remaining sauce from the pan. Sprinkle with the rest of the cheddar cheese.
Bake uncovered for 20 minutes. Cool for 10 minutes before serving.
I served it with a salad today. The crispness of a salad and the creaminess and richness of the dish work perfectly!
