Another day feeding my bosses… Today is Lamb chops!

This is a quick one… I had a request by the boss of me to make lamb chops, how could I refuse? well I could have… but being the boss… ahem… where was I?

Lamb chops, this recipe is a mixture of different recipes, different flavours; you know when I’m craving a lot of things, and then you just mix them all in to one dish? no?

So here it is…

approx. 1kg lamb chops

olive oil, a couple of drizzles

1 white onion, sliced

mint leaves, finely chopped

4 cloves garlic, minced

2 tbsp dijon mustard (major craving for mustard)

splash of sweet soy sauce (don’t ask why or how, it just works)

salt and pepper

Start by preheating the oven to 190℃. Mix the onions, garlic, mint, olive oil, mustard, soy, salt and pepper in a large bowl. Throw in the lamb and toss around. Leave to marinate for at least 2 hours, or overnight in the fridge.

Place a large piece of foil on a roasting tin, put the lamb on the foil in a single layer, onions and all. Cover and seal the lamb tightly in the foil and place in the oven for about 90minutes, until tender.

Uncover the lamb and let it brown in the oven for 10 minutes.

Remove and serve with a green salad, and some potatoes… But of course in our office we ate with chips!!

The “bosses” are really enjoying my cooking… so they don’t realise much when I come in a little late, or when I leave early… wait are they reading this??? *waves*
