mmmmm.... Burger!

 

It has been a long week; days have been going so slowly, I’ve got a cold and work has been dragging on and on… Just one of those weeks!

A major pick me up was in order, and while sushi would have done the trick normally… This week needed something more, something homemade, something greasy!

So hubby and I made Mexican Salsa Burgers… Which is really just a cheese burger with some guacamole and salsa (kachumbari)…

The recipe I got from the Simply Delicious website. They have some amazing recipes and pictures on there!

 My hubby helped me make the burgers, he’s especially good at making very round, perfectly shaped, perfectly seasoned burger:)

I just made the salsa and guac.

The burger:

500g-1kg beef mince

3 garlic cloves, chopped finely

1/4 cup bread crumbs

1/2 tsp ground cumin

1/2 tsp ground coriander

1/2 tsp ground cloves

1tsp paprika

1tsp salt

Fresh black pepper

Mix all the ingredients in a large bowl and shape into lovely round patties 

When ready, fry the burgers in some olive oil about 4 min each side, when you flip the burger throw on some chillies (bobcat burger style) and the cheese.

To help the cheese melt along, I covered the burger patty and let the steam melt the cheese… I do this purely to impress my other half and his perfectly shaped burgers!

Once done, place in burger buns and top with salsa and guac…

For Guacamole:

2 ripe avocados

Juice of 1/2 lemon

1 garlic clove, crushed (I put garlic in everything by the way)

Threw in some tomatoes for colour

Lots of salt and pepper

Mix avocado and garlic in a bowl, I like mine a little chunky so didn’t mash too much.

Squeeze the lemon, and voila! Easy peasy guacamole…

For Salsa or kachumbari for you Kenyans:

3 ripe tomatoes, chopped

1 large red onion

2 red chillies

Parsley, chopped finely- I’d use coriander next time, parsley had a really strong taste that overpowered the tomatoes and onions

I splashed a little bit of balsamic vinegar, for good luck!

Chop everything up and mix in a bowl.. Splash some balsamic and now you’re ready for the most epic burger moment!

All that’s left to do is pile everything, in excess, on top of the burger and eat… I mean devour, as hubby and I did!

 We had chips as well, a little burnt and more like crisps.. More of a side note to the burger!

 I can guarantee you will have serious itis after this, so you may want to eat this close to a couch or a bed…

 the burger definitely lifted my spirits, and of course sharing all that burger goodness with my hubby… What could be better than this??
